Of Eggs and Pigs in Blankets

We had an 'experiment' filled lunch today.


Bro made his egg-which-sticks-on-the-toast toast today. He tried placing the slice of bread on a frying pan and then he cracked the egg on the bread hoping that it would cook. But alas, it didn't. Hence, he turned to the oven for rescue. And thank god it did.

With some garlic butter spread on the bread and some black pepper sprinkled over the egg. It looked good, if not calorie laden!




In the meantime, I decided to make pigs in a blanket. (http://en.wikipedia.org/wiki/Pigs_in_a_blanket) It was something I first had during the first of my many Christmases back in Manchester. Sinful, but delicious!

Well, it's essentially cocktail sausages with slices of streaky bacon wrapped over it. However, we decided to substitute the cocktail sausages with German Bratwurst for a crunchier and meaty bite. :P

It turned out fine but would have been better had we used cocktail sausages. Firstly, we didn't have enough bacon to go round the Bratwursts. And secondly, lazy me didn't bother using a toothpick/cocktail stick to hold the bacon in place. Hence, the 'blanket' slipped off the 'pig' at the end of the cooking process.

Nonetheless, here's the end product.


Note to self:
Will use toothpicks and get more bacon if we use German Bratwurst again. Otherwise, will buy cocktail sausages for it.

I had one of the loveliest lunch recently. Chunks of lamb over a mini 'BBQ Pit', served with butter rice. Washed down with lime juice. All for RM18.90. Hmmm...think I'd better stop my eating spree. As the saying goes, "A moment on yr lips, a lifetime on yr hips." Danger, danger, danger...

Kitchen Therapy

It's been ages since I last cooked a proper meal, from scratch. And hence, taking into account the fact that I'm no longer obliged to study during the weekends, plus with a special request for pasta from the brother, I decided to make it from scratch.


Got some tomatoes and onions from the minimart downstairs. And off home I went to start my mini kitchen rendezvous only to discover that the tin of tomato puree that I spotted in the kitchen cabinet a couple of days ago had been used by the dear brother!

Left with no choice, I decided to just pump in an unknown god-forsaken amount (as the Malay cookbooks would say - "secukup rasa") of ketchup into my mixture of sauteed onions, garlic, beef and tomatoes along with 3 cups of water.


I left the 'brew' to simmer whilst I cooked the pasta and brocolli.


Voila! I'm pretty pleased with the outcome. It tasted lovely! And the brother agreed.... :P

Fish & Noodle House

Note: This is an unpaid and hence, an unbiased review. And when I say it tastes good, it has to be good! :P

As some of you may know, I've been busy moonlighting at my Uncle's newly opened restaurant prior to starting my job. Haven't actually tried the food there during my 'tenure' as a cashier cum waitress cum table-cleaner.

The shop's doing brisk business.


Was fortunate to have the time to drop by the other day with my family. And yes, the noodles tasted awesome, which probably explains why people keep coming back for more (in troops).

I had the Salmon Fillet Noodles (Well, okay, this picture does not do it justice. But I swear on my life it tastes awesome!).


Bro had the Salmon Rice.


And Dad, the Fish Fillet Noodles (without milk)


Whilst Mum had the house specialty; Fish Head Noodles. To be taken specially with the delicious Sambal!


All of which we duly washed down with a Lime and Sour Plum juice (Super concentrated! Yummy!).


As well as a cold Chrysanthemum.


Refreshing and lovely brunch indeed! And the best thing is that we didn't feel thirsty even after downing the whole bowl of soup!!!!

Yummylicious Kaya

A yummy-licious kaya recipe from the master aka Grandma. Better 'file' it in cyber-space before forgetful me forgets the recipe.

My pot of gold!

Ingredients:
4 eggs
(preferrably those from 'kampung chickens' aka Malaysian free range chickens)
Santan (Coconut milk) from 1 coconut
2 bowls of sugar

Cooking Instructions:
(Apologies for the badly drafted instructions below. Can't figure out how to explain the techniques. Kaya making is an art! Trust me, I've failed many times. But finally perfected the technique! *yay!*)

Your mixture should look like this

1. Beat eggs (gently).
2. Add in coconut milk and sugar. Mix well.
3. Put in a 'hot water bath'. Make sure water is boiling gently.
4. Stir until mixture thickens.
5. Leave covered. Stirring ocassionally every 10 minutes.

Note: If your mixture turns out lumpy (as per picture below). It means you're screwed. A whole pot of kaya down the drain!

You're screwed! Better luck next time, babe!

Best served hot, with fresh bread. Or cold, with Cream Crackers (personal favourite).

Cream crackers + Cold Kaya = Best breakfast/Snack on planet Earth

Raisin Scones

I used to bake lots of scones during my University days. Firstly, I am often unable to finish the huge tub of butter that I buy. Hence, in my attempt to finish it off when it's a day or two nearing expiry, I'll bake scones. And secondly, I love raisins!!! Raisin in bread, raisin in biscuits (those you get from the market), fruit cake... ok, I draw the line at raisins in wine. *drools*

And my flatmates loved them too! (Or at least they made me believe that they do. Hmmm... but then, they usually help themselves to them whenever I bake them. So should taste good gua...) Hence, it became my 'signature dish'.

I've certainly gone a long way. My first attempt wasn't that bad. But it didn't look too presentable and the raisins were a bit dry (didn't soak them in milk beforehand) plus, the lack of butter. Hence, the lack of oomph...

My very first attempt: The dried raisins looked more like chocolate chips!


Ha ha! I could still remember the trauma I put Mel through each and everytime I make them. I knew I could always count on her for constructive and an honest comment.

So, every now and then throughout my years in Manchester, I'll bake scones whenever my butter is nearing expiry (every 3 months). And my recipe has evolved. Voila! I've perfected it!



Compare and contrast with the ones in the picture above, please. *Kembang*

Anyway, I made scones again 2 weeks ago (my first proper attempt in 7 months). And as I never wrote my recipe down anywhere, I had to 'pakai hentam' or 'Raleigh style' as XT puts it.

My skills were a bit rusty and as I had to make it from memory, the recipe was a bit 'out of spec' (i.e. not according to specifications). A bit too sweet and a bit too much butter for my liking, but still edible.

It's baking, it's baking...


*tadah...*

Now, I'd better 'file' the recipe down in the cyber-world before I lose/forget about it.


Ingredients:
2 cups self-raising flour
1/2 cup butter
1/3 cup sugar
1/3 cup raisins (optional)
1/2 cup milk
1 egg (Egg yolk and egg white separated)
A pinch of salt

Baking Instructions:
1. Sift flour if desired. (But lazy people like me will just use it as it is!)
2. Mix flour and sugar. Rub in butter.
3. Add milk and egg yolk.
4. Knead mixture (or dough?) and add raisins.
5. Divide into small balls of equal size.
6. Lightly brush egg white over them. (How to structure this sentence properly?)
7. Bake at 170-190'c for 20-30 minutes or until golden brown.



Eating (Serving) Instructions: *grins*
1. Best eaten slightly warm on its own,
or
split into equal halves with butter spread over it ('guai lo' aka fattening aka calorie-ladden style),
or
if desired, split into half with strawberry jam spread over it! (my personal favourite, when the scones aren't too sweet)

Food: Claypot Chicken Rice

I am a big fan of Claypot Chicken Rice (only if it's done the right way!) *fussy, fussy, fussy*. And am skeptical about the quality of KL food. Yucky, yucky, yucky...

Honestly, recommendations from my KL friends that "XXX at YYY is good la...", "AAA at BBB is damn nice lo...", "EEE at FFF is delicious man!!!!" have fallen short of my expectations. So, I've learnt not to trust their tastebuds though (disclaimer) there have been a few rare gems here and there... *smirks*

I found a stall selling 31900 (insert name of town) Chee Cheong Fun at Brickfields!!!! How wrong is that!!!! KL folks, don't get conned, 31900 is NOT famous for Chee Cheong Fun! And the best part is, the same stall sells Sarawak Kolo Mee too!!!
(Note to Miss TKL: Jangan kena tipu ah!!!)

So, my humble deduction is that dia sedang jual Kolo Mee dan 31900 CCF versi lanun (aka pirated).

Well, I might give it a try one day, to check the standards. But then, it's weird as the CCF is served with some mysterious brown sauce (think: KFC mashed potato gravy) and we never have our CCFs with that sauce! *Raises eyebrows* I have a feeling that he might be trying to replicate the Ipoh CCF sauce, but then, where are the mushrooms and minced meat?

Speaking of that, I wanna have some Ipoh CCF. (JS, MW: where to find a yummy one in Ipoh?) The stall that I used to go to sudah gulung tikar. In fact, mum met the lady at Kinta City one day, and she's now happily retired with anak cucu...

Anyway, back to the claypot chicken rice aka nasi ayam belanga...



The claypot chicken rice at Busy Corner, Damansara Jaya is yummy! Even better than the one back at the so-called "龙门客站" (Note: Not sure if I got the Chinese characters right. Literal translation: "Dragon Gate Guesthouse" or in Cantonese: "Loong Mun Hak Charn") back at 31900.

I used to patronise this place a fair bit during those sad and miserable KDU days. Now I know what contributed to the 'KDU blubber'! *grins!*

Had lunch there recently with mum and dad, after 4 years! Ah, nostalgic!!!! (Not really to be honest, as I never felt a sense of belonging to KDU. But still, the tasty claypot chicken rice! Syok!) He he... And they too gave their thumbs up to it!

Trust a Perakian when they say it's tasty! And yes, Penangites too! (before I get stoned to death by Penangites and their pride in their local cuisine, which kononnya is creme de la creme!)

Mega Mac

Bro took up the 'Mega Mac Challenge' the other day. It's been dubbed as a 'heartattack on a bun' due to the sheer size of the burger itself.

Imagine the calorie content, the amount of salt and fat that comes along with the 3 pieces of bread + 4 meat patties + 2 cheese slices + lettuce + 'special sauce'....

A Big Mac is already filling enough on it's own, and now; a Big Mac with 2 extra beef patties. Do you feel your arteries clogging now?

A Mega Mac in its box, in comparison to bro's index finger...


The gigantic burger; side-by-side with dad's miniscule beef burger. Now, does the beef burger look 'tad pitiful there?

I personally have difficulties finishing my usual 'default order' at McDs - The DoubleCheese McValue meal (usually end up leaving one side of the bun on my tray unless I'm extremely hungry). Thus, I can't imagine how one could finish a Mega Mac!

Caramel


I ventured into the kitchen for an experiment today, and the end result was great! Served with vanilla icecream... Ah... Bliss!
I had no set recipe for the 'caramel experiment' in mind. Just went with the basic ingredients and instinct. Thank God it turned out fine!
Ingredients:
Sugar
Condensed Milk
Butter
Water
Cooking instructions:
Mix and stir over low heat till it thickens.
*lols* Yeah, I know it's a bad recipe I'm giving; without the measurements and proper instructions. He He! This is the result if you 'pakai tembak' in the kitchen...

A Pot of Kaya

I love Kaya + Cream crackers very very much... (more than Manchester United)


I tried to make some myself back in Manchester but failed....


Miserably....

Hence, I was determine to 'go up the mountain and look for a sifu' (上山拜师 - cantonese); ala Chinese Kungfu shows should opportunity arise.

In English: I decided to ask Grandma to teach me how to make it...

So, she called out to me this morning,

"Vyen (yes, that's how my grandparents call me)... I'll show you how to make Kaya!"

And of course, I skipped at the opportunity!

So much so that I missed part of the live telecast of the Parliamentary proceedings this morning. (Yup, I'm one of the few people who find joy in following the proceedings. And conincidentally, our Kpr MP got to put forth his question during Question Time today. I didn't miss that part though...)

After 2 hours of ocassional stirring over low heat.

*Tadah!!!!* Yummy-licious Kaya!!!!


Easy peasy.
I know what failed me during my initial DIY attempts - Yes, it's my Archilles heel - IMPATIENCE.
But, as I was under the watchful eyes of the Old Master this morning, I wasn't allowed to turn up the heat. So, I had to stir patiently and wait, and stir, and wait.....

And yes, perseverance pays!!!!

Just like in life, it takes lots of patience and perseverance to get the girl. *Congrats Dom!*

Colourful Platter

Lunch: Fettucine + Garlic + Oil (my attempt at Spaghetti Olio) served with mixed vegetables, 2 pieces of leftover fishcakes and a fried (coconut flavoured) egg

Coconut Flavoured Sunny-side Up


Mum has just seasoned her stainless steel wok with dessicated coconut the other day and I decided to give it the 'acid test' by frying an egg; sunny-side up with it.
Why the so-called 'acid test', you may ask. Well, 'acid test' as the entire egg would be stuck like UHU glue at the base of unsuccessfully/unseasoned woks. I could recall the very first time I attempted to fry an egg in this wok. I ended up with only the yolk, as the egg white was GLUED solid to the bottom of the wok. Hence, I gave up using it. I love non-stick pans!
Anyway, it passed the test, which I'm happy with; but my egg absorbed the smell/flavour of the coconut used. Uggh....
